إنزيمات الاقتطاع إنگليزية: restiction enzymes هي الإنزيمات التي تقطع تتاليات الدنا عند مواضع محددة تعرف بمقرات الاقتطاع، وتوجد إنزيمات الاقتطاع لدى الجراثيم الذي يعتقد بأنه يقيها من غزو العاثيات وتستخدم تلك الإنزيمات كأدوات في الدراسات الوراثية والتشخيص الوراثي.
